While I asked her for the recipe many years ago, I hadn’t really considered it until recently, when I started seeing it on menus. Unfortunately, the brand mom used is no longer on the market, and since she passed away, I can’t ask her for an alternative. Luckily, there are also far more organic and natural varieties, allowing me to experiment and figure out my version of the recipe. What surprised me is that this recipe is far easier to make than I ever imagined, making me question why I didn’t try it earlier. Even better, it is very budget-friendly, making it a great quick meal for weeknights when we don’t feel like cooking and want to throw something in the slow cooker.
Even though you can make this recipe from scratch, I wanted to make it as close to how my mom made it. Not only does it make it a 10-minute or less prep time, but it also makes it great for busy parents who don’t want to miss time with their children or fur babies. I spend more time making side dishes than I do making this entire recipe, making it a must for busy nights (or during those times when you want comfort food after a terrible day).

Ingredients
- 1 1/2 pounds boneless, skinless chicken breasts
- (2) .87-ounce packets of chicken gravy mix
- (1) 10.5-ounce can of cream of chicken soup
- 1 tablespoon unsalted butter
- 2 garlic cloves, minced
- 1 cup water
- 2 teaspoons dried thyme
Instructions
- Add the butter to a pot and place the pot on the stovetop over medium-high heat.
- Once the butter is melted, add the garlic and saute until golden and very fragrant.
- Combine the prepared garlic, gravy mix, soup, water, and thyme in a large crockpot and stir until well combined.
- Add the chicken breasts to the crockpot and turn them over to coat in the gravy mixture.
- Place the lid on the crockpot and turn it onto the LOW heat setting.
- Cook for four hours or until the chicken is cooked through.
- Shred the chicken with a fork and stir everything to combine.
- Serve the chicken gravy over mashed potatoes, rice, or biscuits.
