Have you ever had a good pineapple salsa? With summer finally here, many of us are enjoying outdoor sporting events and family gatherings. One of the things I always struggle with when attending summer parties is what to bring for the potluck. Almost everyone brings dessert, macaroni, or potato salad. While these are some amazing summer foods, it isn’t that interesting when everyone brings the same foods, especially when there aren’t any snack-like foods. This is one of the reasons I love bringing chips and salsa.
For me, salsa is one of those classic foods that almost everyone enjoys and is very easy to prepare. Best of all, it has very little prep time, making it one of those quick foods you can make with very little notice. It especially impresses when you make the salsa from scratch, making it a very cost-effective dish that you can bring and still taste fantastic. No one has to know, though, that the salsa is a fraction of the cost to make compared to what you can get at the store, especially if you’re using in-season fruits and vegetables. With pineapples often on sale during the summer, they are one of my favorite fruits for making salsa.
After serving one of my fruit salsas at a summer party with friends, I decided it might be time to share it not just with friends and family, but with all of you as well. I mean, you guys are in that category, too, right? What shocks everyone is that my pineapple salsa isn’t just tasty, but very inexpensive and easy to make. Once you have tried it though, don’t be surprised if you are making constantly throughout the summer. As well, you can switch out any fruit you like to add a new twist to this delightful recipe. I especially love using peaches, too, when they are in season.

Ingredients
1 small pineapple (about 3 cups), diced small
1 small red onion (about 1 cup), diced
1 red bell pepper (about 1 cup), diced
Cilantro
1 tablespoon avocado oil
2 teaspoon honey
1 lime
1/2 teaspoon garlic powder
1/2 teaspoon salt and pepper
Instructions
- Add the pineapple, onion, and red pepper to a large mixing bowl.
- Add a handful of cilantro leaves to a food processor and pulse until roughly chopped. You should end up with about ¼ cup of chopped cilantro.
- Add the cilantro to the mixing bowl.
- Add the avocado oil, honey, garlic powder, salt, and pepper to a small bowl. Cut the lime in half and squeeze the juice into the bowl. Whisk to combine.
- Pour the honey mixture over the salsa and stir everything to combine.
- Store any leftovers in an airtight container in the refrigerator for up to two days.
Notes
This salsa tastes delicious with tortilla chips, on top of a salad, or on top of grilled chicken on a bed of rice!
