Hot Cocoa Pancake Recipe

Delicious and fluffy hot cocoa pancakes with marshmallows and chocolate syrup

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup milk chocolate hot cocoa mix
  • 1/2 tablespoon baking powder
  • 1 1/4 cup milk
  • 1/4 cup healthy oil, such as olive oil
  • 2 large eggs
  • 1/2 cup mini semi-sweet chocolate chips, plus extra for topping
  • Chocolate syrup for drizzling
  • Whipped cream for topping
  • Mini marshmallows for topping

Instructions

  1. Add the flour, hot cocoa mix, and baking powder to a large mixing bowl and whisk to combine.
  2. Add the milk, eggs, and oil to the mixing bowl and beat with a wire whisk until smooth.
  3. Add the chocolate chips to the batter and stir to combine.
  4. Spray a large skillet with non-stick cooking spray and preheat the skillet on the stovetop over medium heat.
  5. Drop ¼ – ½  cup portions of batter onto the preheated skillet and allow them to cook for about two minutes or until golden brown. Flip the pancakes and cook for an additional 1-2 minutes.
  6. Serve warm, topped with chocolate syrup, whipped cream, mini marshmallows, and additional chocolate chips.
