My husband loves anything spicy, and any recipe that adds a lot of spice, he will always want to triple it. It is one reason I must be careful when we have company. If he takes care of the seasoning in recipes, he makes it so hot that most of our guests won’t eat it. Thankfully, if I control the seasoning, it is usually something that everyone can enjoy without it being too spicy (even if our Minnesota family still thinks almost everything is too spicy but still eats it happily). Even with many of them questioning spicy, they have always loved my Cajun pasta dishes.
My only issue with my Cajun Chicken pasta recipe is that it sometimes takes some time to cook. It isn’t one of those dishes I can make at the last minute, especially since my most popular dish was originally a slow cooker recipe. Thankfully, I have been learning to convert many recipes to a pressure cooker, especially since it has become one of my go-to appliances. One of the best parts of any Instant Pot (or any brand of pressure cooker) recipe is that you can have a complete meal ready in half the time of a standard recipe, giving you precious time back with your family.
One of the things I especially love about my new Instant Pot Cajun Chicken Pasta is that it has all the flavor without giving up any vegetables. I love any dish packed with flavor, but I don’t believe in cutting back on quality (one of the reasons I forgo some slow cooker recipes is that some vegetables just become too soft). Luckily, this recipe has the right amount of flavor and juicy chicken to make everyone in your family happy (and won’t even care that they are also eating veggies).

Instant Pot Cajun Chicken Pasta Recipe
A delicious and fast Cajun chicken pasta recipe filled with vegetables using a pressure cooker.

Ingredients
- 2 tablespoons avocado or olive oil
- 1 cup sliced fresh mushrooms
- 1 cup sweet onion, diced
- 1/2 cup green bell pepper, diced
- 1 cup grape tomatoes, sliced in half lengthwise
- 1 cup heavy cream
- 2 cups chicken broth
- 2 teaspoons Cajun seasoning
- 8 ounces Rotini pasta, uncooked
- 1 1/2 pounds boneless skinless chicken breasts
- 1 cup shredded Parmesan cheese, plus extra for serving
Instructions
- Drizzle the oil into the instant pot/pressure cooker and turn it to the saute option on MEDIUM/HIGH heat. Once the oil is hot, add the mushrooms, onion, pepper, and tomatoes to the pot and saute for about 10 minutes.
- Add the chicken broth, heavy cream, and Cajun seasoning to the pot and stir to combine.
- Add the pasta and stir once more to combine.
- Lay the chicken breasts in the pot and press them into the sauce.
- Place the pressure cooking lid on the pot and set the pressure cooker to HIGH for 18 minutes.
- After 18 minutes, release the pressure from the pot and remove the lid. Remove the chicken breasts from the pot, shred them with two forks, and add the shredded chicken back to the pot.
- Add the Parmesan cheese and stir until the cheese is fully melted.
- Serve hot topped with extra Parmesan cheese.
- Store any leftovers in an airtight container in the refrigerator for up to 2 days.
Don’t have an Instant Pot? Don’t worry, any brand of pressure cooker will do. We personally aren’t huge fans of the Instant Pot brand (but we know a lot of people refer to all pressure cooker recipes as Instant Pot recipes, so we wanted to keep it simple).
