Instant Pot Cajun Chicken Pasta Recipe

A delicious and fast Cajun chicken pasta recipe filled with vegetables using a pressure cooker.

  • 2 tablespoons avocado or olive oil
  • 1 cup sliced fresh mushrooms
  • 1 cup sweet onion, diced
  • 1/2 cup green bell pepper, diced
  • 1 cup grape tomatoes, sliced in half lengthwise
  • 1 cup heavy cream
  • 2 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • 8 ounces Rotini pasta, uncooked
  • 1 1/2 pounds boneless skinless chicken breasts
  • 1 cup shredded Parmesan cheese, plus extra for serving

Instructions

  1. Drizzle the oil into the instant pot/pressure cooker and turn it to the saute option on MEDIUM/HIGH heat. Once the oil is hot, add the mushrooms, onion, pepper, and tomatoes to the pot and saute for about 10 minutes.
  2. Add the chicken broth, heavy cream, and Cajun seasoning to the pot and stir to combine.
  3. Add the pasta and stir once more to combine.
  4. Lay the chicken breasts in the pot and press them into the sauce.
  5. Place the pressure cooking lid on the pot and set the pressure cooker to HIGH for 18 minutes.
  6. After 18 minutes, release the pressure from the pot and remove the lid. Remove the chicken breasts from the pot, shred them with two forks, and add the shredded chicken back to the pot.
  7. Add the Parmesan cheese and stir until the cheese is fully melted.
  8. Serve hot topped with extra Parmesan cheese.
  9. Store any leftovers in an airtight container in the refrigerator for up to 2 days.
