Instant Pot Maple Chicken Curry Recipe

Are you looking for a delicious chicken curry that is also kid-friendly? I enjoy broadening my horizons by trying foods from all over the world. However, one of the issues I have with trying food is sometimes getting my family to try it too. While some of my family members are excited to try new things, others aren’t exactly excited to try new foods. This makes it even more challenging to get younger family members to try new things, since if they see an adult not want to try new things, they will avoid it. This is one of the reasons I have children try sweet new food first, especially if they can also be a bit on the spicy side.

One of the recipes that I have found that most children enjoy is sweet curry. It is a nice mix of flavors without being too scary or having too much heat, making it a great introduction to Indian or Asian dishes. Best of all, most good curries can also hide some vegetables in the sauces, making them a great way to hide some extra nutrition in foods, especially for children who are picky eaters. While I had tried many European foods growing up, curry was something I had never had until I was an adult, and it was a dish made for children with very little heat.  While it was a box mix, it inspired my kid-friendly chicken curry recipe.

What is so special about this chicken curry recipe? For one, it uses ingredients you likely have in your own pantry while also being relatively fast and easy. Best of all, it is made right in your Instant Pot or pressure cooker (don’t worry, we know most people call all electric pressure cookers Instant Pots, so we get it). Unlike most curries, though, it is a bit sweeter with maple syrup, bringing out some of the natural curry flavors without being spicy for children. This is one reason I consider a great introductory curry recipe for kids or adults not used to eating new foods.

Instant Pot Maple Chicken Curry Recipe

A delicious chicken curry that is a fantastic, kid-friendly, sweet curry with pure maple syrup and coconut cream.

  • Yield: 6 servings

Ingredients

Units Scale
  • 2 tablespoons avocado, grapeseed, or olive oil
  • 2 garlic cloves, minced
  • 2 1/2 pounds chicken breast, cut into bite-size pieces
  • 1 teaspoon ground turmeric
  • 2 teaspoons curry powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons red curry paste
  • 3 cups spinach
  • 1/4 cup pure maple syrup
  • 1 cup coconut cream (use sweetened if you want the dish to have a sweeter taste, use unsweetened if you want the dish less sweet)
  • 10 ounces uncooked pasta
  • 2 1/2 cups water

Instructions

  1. Drizzle the oil into the instant pot/pressure cooker and turn it to the saute option on MEDIUM/HIGH heat. Once the oil is hot, add the minced garlic and chicken pieces to the pot. Cook until the chicken is fully cooked, stirring frequently.
  2. Add the turmeric, curry powder, salt, and pepper to the pot and stir to coat the chicken.
  3. Add the spinach to the pot and cook until the spinach is soft and wilted.
  4. Add the coconut cream, maple syrup, curry paste, water, and pasta to the pot and stir to combine.
  5. Place the pressure cooking lid on the pot and set the pressure cooker to HIGH for 6 minutes.
  6. After 6 minutes, quick release the pressure from the pot and remove the lid.
  7. Store any leftovers in an airtight container in the refrigerator for up to 2 days.
