Do you love a good Taco Pasta? We do! Since my husband and I work from home, we typically spend from the moment we get up until early in the evening working. We just love our jobs and don’t mind putting in the extra work. The only problem we have is that if we aren’t careful, it can be 9 or 10 PM before we even finish dinner, especially if said dinner took an hour from start to finish to cook. Until costs increased dramatically this year, we used to eat out on days we were working late, but it isn’t something we can justify anymore. Luckily, our pressure cooker has rescued us, allowing us to make some of our favorite meals fast.
One of the meals I have especially loved making is tacos. It is fast and easy, especially when you can go from frozen ground beef to fully cooked tacos in less than half an hour. My only issue with tacos is that while they are delicious, you need a bit of variety. Rather than give up on taco meat, we have just been trying to figure out other ground beef and taco seasoning uses that aren’t just putting it on a shell and going. This is one of the reasons we have especially loved taco pasta. It is easy to make, and you can easily have a meal in about 25 minutes.
One of the things I also love so much about Instant Pot taco pasta is that it is very inexpensive to make, and you can have so many vegetable side dishes with it, too. It is also a rather large dish, especially for two people, giving us leftovers for quite a few days. It isn’t uncommon for me to double the recipe to ensure we have quite a bit of leftovers we can heat up for lunch and dinner. The only issue I have had with this recipe is that if we aren’t careful, we will eat it for two or three days without complaints since it’s just that good!

Instant Pot Taco Pasta
A delicious and easy to make taco pasta that is perfect for busy weeknights and full of flavor.

Ingredients
- 2 tablespoons avocado or olive oil
- 2 garlic cloves, minced
- 1 cup yellow onion, diced
- 1 pound lean ground beef
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 2 teaspoons cumin
- 14.5-ounce can diced fire-roasted tomatoes
- 15.25-ounce can corn, drained
- 1/2 cup mild salsa
- 2 cups chicken broth
- 8-ounce rotini pasta, uncooked
Instructions
- Drizzle the oil into the instant pot/pressure cooker and turn it to the saute option on MEDIUM/HIGH heat. Once the oil is hot, add the garlic, diced onion, and ground beef to the pot. Cook until the meat is fully cooked and the onion is soft and translucent.
- Add all the remaining ingredients to the pot and stir to combine.
- Place the pressure cooking lid on the pot and set the pressure cooker to HIGH for 6 minutes.
- After 6 minutes, quick release the pressure from the pot and remove the lid.
- Serve hot, topped with shredded cheese, sour cream, avocados, or crushed tortilla chips.
- Store any leftovers in an airtight container in the refrigerator for up to 2 days.
