Instant Pot Taco Pasta

A delicious bowl of Instant Pot Taco Pasta.

A delicious and easy to make taco pasta that is perfect for busy weeknights and full of flavor.

Ingredients

  • 2 tablespoons avocado or olive oil
  • 2 garlic cloves, minced
  • 1 cup yellow onion, diced
  • 1 pound lean ground beef
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 2 teaspoons cumin
  • 14.5-ounce can diced fire-roasted tomatoes
  • 15.25-ounce can corn, drained
  • 1/2 cup mild salsa
  • 2 cups chicken broth
  • 8-ounce rotini pasta, uncooked

Instructions

  1. Drizzle the oil into the instant pot/pressure cooker and turn it to the saute option on MEDIUM/HIGH heat. Once the oil is hot, add the garlic, diced onion, and ground beef to the pot. Cook until the meat is fully cooked and the onion is soft and translucent.
  2. Add all the remaining ingredients to the pot and stir to combine.
  3. Place the pressure cooking lid on the pot and set the pressure cooker to HIGH for 6 minutes.
  4. After 6 minutes, quick release the pressure from the pot and remove the lid.
  5. Serve hot, topped with shredded cheese, sour cream, avocados, or crushed tortilla chips.
  6. Store any leftovers in an airtight container in the refrigerator for up to 2 days.
