Mom disliked most beans (except restaurant-style southern beans), and my Dad’s military cooking was, at best, bland and mushy (beans were the only thing he knew how to cook). Luckily, my husband encouraged me to try different bean recipes, with a spicy white chili becoming one of our favorite fall dishes.
Of course, with my in-laws visiting more (who hate anything spicy) and having a young nephew, I have had to learn to modify my recipes and tone down the heat to make them more kid-friendly when we have company. To make matters worse, though, I usually have little warning when I have company, meaning I don’t even have the time to start my slow cooker white chicken chili recipe. Luckily, we have been experimenting more with pressure cooker recipes. Since I needed to make a less spicy recipe, I decided to use my old recipe as a base and see if I could create an Instant Pot, less time-intensive alternative.
After some experimentation, I was finally able to create what my family considers the perfect, kid-friendly white chicken chili recipe. This recipe is also healthier since it uses unsweetened coconut milk rather than full heavy cream. We found that it gave the recipe some nice flavor and profile texture without the excess saturated fat. It wasn’t too spicy, with our little visitors having no issues eating this yummy soup. Though I will freely admit, I make it far spicier when cooking for my husband and myself, since we like spicy food.

A delicious, easy to make white chili chicken recipe using your preferred electric pressure cooker (or Instant Pot)
Ingredients
- 4 cups chicken broth
- (1) 13.5-ounce can unsweetened coconut milk
- 1 1/2 cups frozen corn
- 1 cup sweet onion, chopped
- (2) 15.5-ounce cans Great Northern beans, drained and rinsed
- 14-ounce can diced green chilis
- 2 tablespoons chili seasoning
- 2 pounds chicken tenders
- Juice from 1 lime
Instructions
- Add the broth, coconut milk, corn, beans, green chilies, onion, and chili seasoning to the Instant Pot/pressure cooker.
- Squeeze the lime juice into the Instant Pot and stir until everything is well combined.
- Add the chicken tenders to the pot.
- Place the pressure cooking lid on the pot and set the pressure cooker to HIGH for 12 minutes.
- After 12 minutes, quick release the pressure from the pot and remove the lid.
- Remove the chicken tenders from the pot, place them in a separate bowl, and shred them with two forks.
- Add the shredded chicken back to the pot and stir to combine.
- Serve topped with shredded cheese, crushed tortilla chips, or sour cream.
- Store any leftovers in an airtight container in the refrigerator for up to 3 days.
