Instant Pot White Chicken Chili Recipe

A delicious, easy to make white chili chicken recipe using your preferred electric pressure cooker (or Instant Pot)

Ingredients

  • 4 cups chicken broth
  • (1) 13.5-ounce can unsweetened coconut milk
  • 1 1/2 cups frozen corn
  • 1 cup sweet onion, chopped
  • (2) 15.5-ounce cans Great Northern beans, drained and rinsed
  • 14-ounce can diced green chilis
  • 2 tablespoons chili seasoning
  • 2 pounds chicken tenders
  • Juice from 1 lime

Instructions

  1. Add the broth, coconut milk, corn, beans, green chilies, onion, and chili seasoning to the Instant Pot/pressure cooker.
  2. Squeeze the lime juice into the Instant Pot and stir until everything is well combined.
  3. Add the chicken tenders to the pot.
  4. Place the pressure cooking lid on the pot and set the pressure cooker to HIGH for 12 minutes.
  5. After 12 minutes, quick release the pressure from the pot and remove the lid.
  6. Remove the chicken tenders from the pot, place them in a separate bowl, and shred them with two forks.
  7. Add the shredded chicken back to the pot and stir to combine.
  8. Serve topped with shredded cheese, crushed tortilla chips, or sour cream.
  9. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
