Whiskey Peach Chicken Recipe

2 TBSP butter (for cooking) 2 TBSP oil (for cooking) 12 chicken drumsticks 1 medium white onion, diced 1 1/2 cups whiskey 3 cups bbq sauce 1/2 cup peach preserves 4 peaches, sliced Optional: Italian Flat Leaf Parsley

Instructions

  1. Preheat oven to 300 degrees F.
  2. Add oil and butter to a large cast-iron skillet on a stovetop set to medium heat, and heat until butter has liquified.
  3. Add in the diced onion and saute for about 3-4 minutes.
  4. Place chicken drumsticks in a skillet and brown for about 3 minutes. Turn the chicken over using tongs and cook for about 3 more minutes.
  5. Remove the chicken from the skillet.
  6. Add whiskey to skillet, and simmer for about 4 minutes
  7. Add BBQ sauce, ¼ cup water, and peach preserves. Stir until well combined.
  8. Place browned chicken in skillet, and top with peach slices.
  9. Bake covered for 1 ½ hours, then uncovered for ½ hour or until chicken is very tender.

Notes

  • Need ideas for the perfect sides? This yummy peach chicken recipe goes great with green beans or seasoned potatoes.
  • Not sure which BBQ sauce to use? This is a personal taste. I used a honey BBQ sauce I had opened in the fridge.
  • To avoid messes, use a large cast iron skillet with high sides and place a cookie sheet under said skillet to get any possible drippings.
