Do you make banana bread when you have over-ripe bananas? It has always been one of my go-to things to make since I hate to waste food. My husband, however, has never been a big fan of banana bread. He thinks bananas are only good in their original fruit form and only when they barely pass the green stage. I am not as picky as he is, but it doesn’t mean we don’t fight over throwing away the bananas (not even my dogs will eat ripe bananas, which is very strange to me). I have been trying to find a recipe the family enjoys that uses ripe bananas, which differs slightly from traditional banana bread.
After experimenting (and many failures), I found something that I think may get him to eat (or at least get visiting guests to enjoy). Since cookies are one of those treats everyone seems to enjoy, I decided to try making banana bread cookies. I mean, why not mix a traditional cookie with bananas, especially since bananas have always been a substitute for eggs (unfortunately, I did this often during egg shortages).
These cookies are similar to chocolate chip cookies, with a sweet banana flavor. They are also very easy to make, making them a great treat for kids or if you are in a hurry and don’t want to deal with the entire ordeal of making traditional banana bread. From my experience, the trick is making sure you have the butter at room temperature (this isn’t one of those recipes where you can cheat) and making sure you have quality chocolate. Not doing this can affect the texture of the cookies. I also prefer them without the nuts, but some taste testers said they preferred them with walnuts.
As I said, one of the big appeals of these cookies to me is their pure speed. You can have these cookies prepped and out of the oven in less than 25 minutes, making them a fantastic last-minute cookie that you can make to impress guests (or visiting little kids). I also love that they are a little healthier with the added nutrition of the bananas, making me feel better about serving them.
