For the Cupcakes:
1 1/2cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2cup butter, at room temperature
1cup white sugar
2 eggs, at room temperature
1 1/2 limes, zest and juice
2 tablespoons tequila
1/4 teaspoon vanilla extract
1/2cup whole milk
1 to 2 tablespoons tequila (brushing the cupcakes)
1cup unsalted butter, at room temperature
2 3/4cups powdered sugar
1 tablespoon lime juice
Pinch of coarse salt
Preheat the oven to 325 degrees F.
While you are waiting, grease or line your cupcake pan.
In a medium bowl, whisk together the flour, baking powder and salt
Using your stand mixer on medium speed, beat the butter and sugar together for 5 minutes
Add eggs one at a time to the mixture
Scrape the sides of the bowl and add the lime zest, lime juice, vanilla extract and tequila. Mix well.
Reduce your mixer to low speed and start adding the dry ingredients slowly, along with the milk.
Bake for 25 minutes or until cupcakes are slightly golden. Cool for 5 – 10 minutes.
Brush the tops of the cupcakes with the 1 to 2 tablespoons of tequila. Allow to completely cool before icing.
Cream the butter and sugar in your stand mixer on medium high speed for about 5 minutes.
Add the lime juice, tequila and salt mix on medium-high speed until fluffy. If the frosting appears a bit too soft, add some additional sugar, one spoonful at a time until desired consistency is reached.
Frost cupcakes and garnish, if desired, with lime zest, an additional sprinkling of salt and a lime wedge.
