Are you someone who likes pineapple chicken? In my family, it is one of our favorite 30 minutes or less meals. I have made different varieties of this dish for years, ranging from recipes I can make in my pressure cooker to slow cooker.
Since I use the same multicooker for both, I sometimes have to make this traditional dish on my stovetop. One of the reasons I always come back to it is that it is so easy to make and always makes everyone in my family very happy. It also impresses guests, making this pineapple chicken one of my favorite entertaining dishes.
Part of what makes this recipe so amazing is that it has a great amount of flavor and is fairly inexpensive. With costs increasing, I am always looking to have one or two budget meals a week to make quickly. While it may sound like it has a complicated ingredient list, don’t worry, it isn’t. This pineapple chicken recipe is straightforward to make and genuinely full of flavor without being too spicy. Best of all, it is fairly healthy too – especially if you add some fantastic vegetable sides to the rice.
My only suggestion is to make your rice ahead of time. I have found that this recipe is best served hot. I have also found that, unlike some of my other recipes, eating it on the same day is better, making it not the best recipe for doubling or having it as leftovers. Don’t worry though, I have rarely made this dish for family and had leftovers since almost everyone goes back for seconds (one of the reasons I love serving it to guests – everyone is happy and full!).
