  • 2 tablespoons of Heavy Cream or Half & Half
  • 3 Tablespoons of Garlic, Basil, & Oregano Diced Tomatoes (in a can)
  • 1/4 cup Monterrey Jack Cheese
  • 1 Tablespoon of butter
  • 4 Individual Van Natural Food Power Grain Frozen Waffles

Instructions

  1. ) In a small bowl, crack the eggs and beat the eggs with a fork until they are very well mixed.
  2. ) Mix your chosen dairy with the eggs. Make sure it’s mixed in well.
  3. ) Set one of your stove burners to medium high heat. Place a frying pan on the burner with the tablespoon of butter. Melt the butter thoroughly and have the butter bubbling. You want the pan very hot before the eggs go in.
  4. ) Pour egg mixture into your pan. As the edges cook, push the cooked areas into the center of the omelet. Yes, it looks ugly but this is going to be the unseen center of your omelet. By cooking your omelet in this way, it makes sure it is cooked evenly and you do not have to flip it.
  5. ) One the egg looks mostly cooked, place the cheese and tomatoes in the center of the omelet. Once the cheese has melted, carefully fold the omelet and transfer to plate.
  6. ) Remove four individual waffles from the your box of Van Natural Food Power Grain Frozen Waffles. Toast these waffles in the toaster.
  7. ) Cut your omelet in half and place on two toasted waffles. Top with two remaining pieces and serve warm.
