Snickerdoodle Cookie Ice Cream Recipe

Have you ever had Snickerdoodle Cookie Ice Cream? For many of us, snickerdoodle cookies are a significant part of our childhood. We were awarded fresh, soft cinnamon cookies at almost any school function. Not only are they very inexpensive to make, but they are great for children just learning to cook, making them a fast and easy cookie for children of all ages. While delicious, sometimes a huge recipe can be too much for a family, especially if they don’t want to eat dozens of cookies throughout the weekend! This is where having a fantastic Snickerdoodle Cookie Ice Cream recipe comes in handy!

What makes this no-churn Snickerdoodle Cookie Ice Cream recipe so unique? Like the cookie recipe, it is easy to make and uses ingredients you likely already have in your fridge and pantry. The most crucial part is making sure you have Snickerdoodle cookies handy or purchase your favorite store brand if you don’t have any already lying around. We highly recommend homemade cookies since they make the recipe much more flavorful!

While you can use an ice cream maker for the recipe, it isn’t necessary. All you need are the ingredients and an 8 x 4 loaf pan. The trick is ensuring you have one that can handle being in the freezer. I prefer using a metal pan since this is one of the most common pans I use for making fruit bread during the holiday season. Metal also does better in the freezer, ensuring your ice cream is perfectly smooth and has the correct texture.

Since this recipe needs the pan and electric mixer, it is also the perfect ice cream recipe for children on a nice fall day or during fall break. If you want a soft-serve texture, it can be ready in under four hours, allowing you to take care of other chores while your Snickerdoodle Cookie Ice Cream freezes. Personally, though, I prefer a more hard, traditional texture, which is something you only get by letting this ice cream freeze overnight without being disturbed.

Also, if someone gets into the recipe a bit early, don’t worry; it won’t ruin it. We have found that the recipes last about three to four days in the freezer, especially if covered with freezer wrap (or if you are lucky, an appropriate top if your pan came with one). Just keep it covered and put it back in the freezer asap if you are taste testing!

Snickerdoodle Cookie Ice Cream Recipe

A delicious and very easy use for extra snickerdoodle cookies with this no-churn Snickerdoodle Cookie Ice Cream Recipe.

Ingredients

Units Scale

2 cups heavy whipping cream
14 oz. can sweetened condensed milk
2 teaspoons cinnamon
1 teaspoon vanilla extract
1 cup Snickerdoodle cookie pieces, plus extra for topping

Instructions

1. Add the heavy cream, vanilla extract, and cinnamon to a large mixing bowl and beat on high speed with an electric mixer for about two minutes, or until stiff peaks form when the beater is lifted.
2. Add the sweetened condensed milk and fold it in gently with a rubber spatula until fully incorporated.
3. Add the Snickerdoodle cookie pieces and mix gently with a rubber spatula until combined.
4. Pour the ice cream into an 8×4 metal loaf pan and place in the freezer for a minimum of four hours for soft ice cream, or overnight for hard, more scoopable ice cream
5. Remove the ice cream from the freezer and top with extra Snickerdoodle cookie pieces.
6. Serve in a waffle cone or bowl topped with a dusting of cinnamon.
