Healthy Fall Recipes

As we dive deeper into fall, the evenings grow cooler and the days shorter.  Sometimes it feels as if we don’t have as much time to get things done during the day.  I’ve found that turning to simple recipes like soups or meals that utilize my slow cooker can help me save time in the kitchen.

The bountiful produce that’s available paves the way for hearty, comforting dishes that I never think to make during the summer months.  I like to take advantage of the nutritious dark, leafy greens; squash; and crisp apples that are in season when considering what to purchase for weekly meals.

I mentioned that soups are some of my favorite dinners to make as the weather cools off.  It’s easy to make a big batch early in the week so I have lots of leftovers to enjoy.

  • Fall Vegetable Chowder Recipe – a think and creamy soup that is perfect for keeping you warm (and very tasty)
  • Broccoli cheese and potato – it has the flavor and thick, creamy texture of Panera Bread’s broccoli cheddar variety, but without the extra calories from fat (over half the calories in PB’s version come from fat).
  • Creamy Vegetarian Parmesan Soup with Italian Seasoning – this soup is very rich and super easy to make in the crockpot!
  • Chickpea noodle.
  • Chili – I love all the vegetables in this one, although I’ve found that I have to cut down on the jalapenos.
  • Chunky root vegetable soup.
  • Minestrone (although here is a good crockpot version).
  • Sweet and spicy veggie stew.
  • Very very veggie stew.

If you have some extra time on your hands, you could try something a bit more elaborate like baking stew in pie pumpkins.  This adds a little festive flair and is sure to impress company.

Another family-friendly dinner is sloppy josephines, which are a great vegetarian twist to an old childhood favorite. As well, kids love fun vegetarian recipes like these squash boats, made from acorn squash and apples.

If pasta is more your style, you might consider:

  • Broccoli rigatoni
  • Creamy pumpkin risotto
  • Lasagna – you can even take advantage of the produce at your market and go noodle-less.
  • Mushroom stroganoff.

For some reason, fall breakfasts call to mind images of oatmeal, breads, muffins, and pancakes for me.  When it comes to baked goods, pumpkin is the obvious ingredient of choice but don’t forget that it’s apple season, too!  Here are some delicious fall breakfast ideas:

  • Apple scones.
  • Autumn granola + yogurt.
  • Baked apples.
  • Baked apple cider donuts.
  • Banana bread (or chocolate chip banana bread).
  • Butternut squash and kale frittata.
  • Cinnamon apple oatmeal in the crock pot.
  • Crock pot pumpkin oats.
  • Oatmeal raisin pudding.
  • Pumpkin bread.
  • Pumpkin cinnamon rolls.
  • Pumpkin spice latte.
  • Scrambled tofu.
  • Toast spread with apple butter.

    they all sound really yummy. I should bookmarke this so my husband can cook some of it hehhehehe. i never tried vagetable chowder yet but it sounds delish…. my son loves clam chowder 😀

    Thanks for posting all these recipes! My son and I were just talking about making pumpkin bread or even zuccini bread this week. I love making fall comfort food.

    Oh My! My mouth is watering already!!! Those recipes are looking mighty amazing. I think I'm going to start with the apple recipes and try to work my way through a good amount of this list.
